Wash one cup of Elbabour’s coarsely ground freekeh in plenty of water and drain well. Heat corn oil or vegetable oil in a pan until hot, then add the washed freekeh and quickly fry for one minute. Add a teaspoon of Elbabour’s freekeh spice mix. After two minutes, add two-and-a-half cups of water and a dash of salt. Reduce to low heat and simmer for 15-20 minutes until water is absorbed and freekeh is al dente. Serve with chilled yogurt, almonds, toasted pine nuts and an Arab salad of tomatoes and cucumber. A wonderful and satisfying meal with little effort.
